There are different ways to create a balsamic vinegar, but only one that can be said to be the original… Our Hawaii Balsamics are created in Modena, Italy – acknowledged worldwide to be the gold standard for Balsamics – from cooked grape must matured by a long and slow process, through natural fermentation.

This is followed by progressive concentration by aging in a series of casks made from different types of wood, but no other spices or flavorings. Hawaii Balsamics are aged through barrels of seven different types of wood over 18 years of aging.

Thereafter, the Balsamic is combined with a high-quality wine vinegar to create a commercial balsamic vinegar, available in its pure traditional flavor or with a variety of natural flavorings.

The Traditional Balsamic is dark brown in color, but full of warm light and has a syrup-like fluid consistency. It can be created from a blend of wine grape varietals or from a single grape It is created in the perfect proportion of sweet and sour, to offer your taste buds a full, rich flavor with a variety of subtle nuances. 

We add no vinegar to the traditional Balsamic, but we do offer a wide variety of flavorings, yielding flavor profiles that speak to your palette of the Pacific Islands – particularly of Hawaii, with Polynesian influences.

Are your balsamic vinegars all natural?

Yes, the Balsamic Base is very simple Grape must and wine vinegar. The flavors are naturally infused with the described flavors.

What is balsamic vinegar?
Balsamic Vinegar is basically boiled grape Must (crushed Grape) that has been aged and concentrated then mixed with wine Vinegar. Our product has been aged for a minimum of 18 years passed through 7 different types of wooden barrels then mixed with the highest quality Wine Vinegar available in as small a proportion as possible to generate a high quality commercial Balsamic Vinegar.
Why is blonde balsamic so light?
When the grape must was originally boiled the temperature was kept to a minimum to decrease the natural caramelization of the grape sugar keeping the relative clarity of the grape juice.
Is there any gluten?
No, there is only Grapes from the grape must and Vinegar and what ever natural flavor we have added.
What is the difference between your vinegar and vinegar I can buy at the store?
Our product is a ”traditional Balsamic” that has been aged for a minimum of 18 years passed through 7 different types of wooden barrels then mixed with the highest quality Wine Vinegar available in as small a proportion as possible to generate highest quality commercial Balsamic Vinegar. Most of the balsamic vinegar available on the store shelf has a much higher quantity of Vinegar to Balsamic Ratio, and few if any have gone through the aging process.
Where does your balsamic come from?
The base that we use for all our Balsamic Vinegar comes from the Modena Region of Italy and the Flavors are infused through a special infusion process in the USA.
Why are your balsamic vinegars so thick?
Our product is a ”traditional Balsamic” that has been aged for a minimum of 18 years passed through 7 different types of wooden barrels then mixed with the highest quality Wine Vinegar available in as small a proportion as possible to generate highest quality commercial Balsamic Vinegar. This creates a naturally thick rich product without
using any thickening agents.
Do you ever use artificial colors or flavors?
No. All of the flavoring we use is the natural extract of the fruit or vegetable.
Are your products vegan?
Yes.
How do I use balsamic vinegar?

Hawaii Balsamics are amazing. Pour out of the bottle as a salad dressing, use as a dip for bread, vegetables or fruits.

Some flavors are delicious when served with desserts like cheesecake or ice cream while others are perfect for marinading pork, beef, chicken or fish. There are recipes attached to each flavor.
